Back in the ‘80s, Lola Weyman encountered farmers growing esoteric varieties of lentil on the rolling, verdant hills of northern Idaho. She began marketing them, and then went on to develop new strains like Black Beluga, Petite Crimson and an American version of Lentilles de Puy, a highly prized French lentil. Zursun now produces over 50 different varietals of heirloom legumes in a wide spectrum of colors and markings.
